Description

Bourgogne Côte-Chalonnaise Blanc "Les Clous Aimé" 2022 | Wine from Domaine de Villaine

The Domaine de Villaine is located in Bouzeron, at the heart of the Côte Chalonnaise in Burgundy. Nestled in a historic terroir, this estate continues an ancient winemaking tradition shaped by the monks of Cluny since the Middle Ages. Specializing in the Aligoté grape variety, the estate stretches across slopes situated between 270 and 350 meters in altitude, benefiting from limestone soils and a warm microclimate. The attention paid to yields and the quality of the grapes allows for the production of characterful wines that reflect the authenticity of the Burgundian terroir.

The Bourgogne Côte Chalonnaise Blanc "Les Clous Aimé" 2022 comes from seven carefully selected parcels of Chardonnay in the Bouzeron appellation. The vines, facing south, benefit from ideal conditions for optimal grape ripening. This wine, produced with moderate yields, reveals intense mineral notes from a young age. As it ages, it develops notable aromatic complexity with a beautiful structure on the palate. The label pays homage to the local tradition, where the elders of the village of Bouzeron called these parcels "Les Clous Aimé", thus showing their attachment to this land.

The Bourgogne Côte Chalonnaise Blanc "Les Clous Aimé" 2022 offers a pale color with golden reflections. The nose is subtle, dominated by aromas of white fruits such as pear and peach, mixed with mineral and floral notes. On the palate, it presents a lovely freshness, with balanced acidity that supports its length. The flavors evolve towards nuances of dried fruits, hazelnut, and a touch of butter, typical of great Burgundian Chardonnays. This wine reveals its full potential after a few years of aging, when it acquires a richer texture and even more complex aromas.

This Bourgogne Côte Chalonnaise Blanc is ideal for pairing with grilled or poached fish, white meats like roast chicken or veal, as well as mild cheeses such as fresh goat cheese, Reblochon, Beaufort, or Comté. It is best served between 12 and 14 degrees Celsius to fully appreciate its finesse and subtle aromas. Avoid overly spicy dishes or heavy sauces to preserve the delicate balance of the wine.
