This Chablis "Clos Béru, Monopole" 2019 from Domaine Athénaïs de Béru is the emblematic cuvée of the Château de Béru.

It comes from a vineyard located at an altitude of 300 m, planted around the castle on an outcrop of pure Kimmeridgian limestone bedrock and surrounded by an enclosed wall several hundred years old.

It takes a long ageing of 18 months in demi-muids, then a year in foudre and 6 months in the bottle to tame a little the crazy intensity of this powerful, mineral and complex wine.
