Explore our remarkable cuvée from the Hautes-Côtes de Nuits, where a magnificent vine spreads out, caressed by the winds of the plateau and ideally suited to organic cultivation. This cuvée, the little sister of its red predecessor, embodies a precise, mineral and fruity style, magnified by a carefully orchestrated ageing. The grapes were carefully harvested on September 23 and 30, 2021, in ideal conditions for optimal ripening. With a yield limited to 16 hl/ha, each bunch is pampered to express its full potential. Vinification begins with a delicate pressing in a pneumatic press, followed by a 12-hour settling process, before alcoholic fermentation in vats and barrels. The ageing period, which lasts 16 months in barrels and 2 months in stainless steel vats, gives this wine a rich and complex texture. With 17% new barrels and a gentle and slow toasting, the aromas are sublimated, revealing all the finesse of the terroir. No racking, just fining with bentonite and light filtration before bottling, thus preserving the purity and authenticity of this exceptional cuvée.
