The Bourgogne Aligoté Blanc 2021 from Domaine Rollin Père et Fils embodies the harmony between roundness and freshness. Cultivated on the north-western slopes of the Corton hill, its vines, some of which are more than 50 years old, benefit from a limestone and marl soil. The manual harvest ensures the quality of the grapes, which are pressed slowly to preserve their aromatic finesse. The natural fermentation, without the addition of yeasts, and the winter malolactic fermentation give the wine its sharpness and frank character. Matured on lees until spring, it reveals fresh and elegant fruit on the palate, supported by a remarkable liveliness, with floral nuances.
