White wine Côte de Beaune ''Combe d'Eve'' 2018 Domaine Emmanule Giboulot

Created in 1985, Domaine Giboulot has been organically grown since 1996 and biodynamically since 1996, on 12 hectares, including 5.30 hectares in the white Côte de Beaune and in the Saint-Romain, Hautes Côtes de Nuits, Rully Premier cru "La Pucelle" appellations and also, Les Terres Burgondes, a PGI replanted with Pinot Noir, Pinot Beurrot and Chardonnay.

This 2018 Côte de Beaune "Combe d'Eve" from Domaine Emmanuel Giboulot comes from a terroir on the hillside of the Beaune mountain, above the 1er crus, where the very old vineyard of the Côtes de Beaune unfolds. This rare appellation has an area of only 52 hectares, one of the smallest in Burgundy. Although their names are similar, the Côte de Beaune appellation should not be confused with that of the Côtes de Beaune Villages (3,222ha). Indeed, the productions concerned are quite distinct: the first concerns only the production of Beaune, and the second, that of 14 villages on the coast, with the exception of Beaune.
The "Combe d'Eve" offers a beautiful pale gold colour with green reflections, the bouquet starts with aromas of orchard fruits, citrus fruits and white flowers, its attack is frank followed by a beautiful tangy framework and goes very well with scallops, sea bass and all firm-fleshed fish. But also with sushi and raw fish.
