For centuries, Champagne mainly produced still wines, especially reds. Today, this precious heritage is carried on by two rare AOPs: Coteaux Champenois and Rosé des Riceys.

These "niche" designations, with very small productions, the still wines of Champagne hold more than one reason for genuine interest: first of all, they are a living testimony of a glorious past; secondly, they sometimes offer bottles of original and surprising stylistic choices, as well as authentic gustatory and aesthetic value; and finally, they are of pressing relevance, as they represent a truly interesting opportunity for the future of the region, faced with a demand for increasingly territorial wines and compelling climatic changes.
