The Vines & Wines of Burgundy is a precious memoir attributed to Dom Denise, an 18th-century Cistercian monk. Translated into French by Catherine Hervet-Girard and published by Terre En Vues, this manuscript offers a rare glimpse into the viticultural and oenological practices of the time.
Dom Denise wrote this manuscript in 1779. It was initially translated into Italian and enriched with brief notes by Marco Lastri (1731-1811), author of L'Anno Rustico. Only a few copies of this memoir remain, making it a valuable work. In 1845, a new Italian version was published by Giovanni Silvestri and attributed to Domenico Sestini (1750-1832).
The French translation presented here is based on the first Italian translation from 1779. This document is one of the few written testimonies on viticultural and oenological practices from a time when oral transmission was the norm. It positions itself as the successor to the Theatre of Agriculture by Olivier de Serres in its genre.
