Getting into wine years ago and eagerly training for my first blind tasting exams, I never quite understood what I had to look out for in order to identify a Chablis. I hardly dared to write down the words « fresh mushroom » the firt time I had a fine Chablis in my glass, thinking this aroma would be too far removed from accepted wine terminology. The textbooks suggested looking for steely minerality and flint. However, I never seemed to understand the deeper nature of Chablis until one day when I was handed an unknow wine to assess.
