Cider Bitter Liqueur "Doxa" from the Cider House Eclektik

Cidrerie Eclectik is a cider house that was created in Beaune in 2020 thanks to l'association of four friends who have in common the love of good things and the desire to design ciders aged in oak barrels from different alcohols and wines, then with a fermentation made in the bottle according to a Champagne method.

This Cider "De Cidre De Là" from the cider house Eclektik is a true work of gustatory art and the representative cuvée of la maison. It is made from an impressive variety of apples from renowned terroirs such as Burgundy, Normandy, Brittany and the Pays d'Othe. Its slow fermentation is carried out using indigenous yeasts, which gives the cider an unrivalled depth of flavour. Then comes the stage of maturing the juices in barrels from a selection of 40% wine barrels and 60% carefully chosen spirits barrels. These include barrels of Aligoté, Chardonnay, Pinot Noir, Whisky, Armagnac, Fine de Bourgogne and Calvados. The Champagne method used for the bottling of the wine offers a delicate and refined effervescence, and la maison has chosen to use a low-sugar dosage liqueur, giving this cider the Extra Brut label and highlighting the purity and intensity of the apple and terroir aromas. On the nose, we discover notes of fresh apples and a little floral and minty touch. A beautiful liveliness in the mouth offers length and balance. "De Cidre De Là " is a sensory experience that testifies to the art of the Cidrerie Eclektik 's passion for the creation of exceptional ciders.
