SAB'S "La Fine" Spirits Alambic Bourguignon
Guardian of a centuries-old tradition, the Alambic Bourguignon is located in Beaune, in the heart of wine-growing Burgundy and seeks to preserve the ancestral art of distillation. Once one boiler per village, today there are only a handful of craftsmen carrying on this heritage. The Alambic Bourguignon processes grape marcs and wine lees from the most prestigious terroirs of the region and are among the last to produce the AOC Marc de Bourgogne and Fine de Bourgogne. They also offer a very nice range of Gin and Eaux-de-vie from different horizons.
This Très vieille Fine de Bourgogne de l'Alambic Bourguignon is an eau-de-vie made from Pinot Noir and Chardonnay wine lees, both 10% Burgundian. This precious beverage matured for 8 years in small Burgundian oak barrels and then matured for 6 months in Cognac barrels. Each bottle is hand-sealed with white wax. The particularity of this Fine lies in the fact that it is not filtered, thus preserving all of its aromas that may contain deposits. On the nose, it is powerful and round, with aromas of ripe fruit at first, followed by a pleasant finish reminiscent of rum and grapes. On the palate, the "very old fine Burgundy" offers a rich, mellow sensation, with a velvety texture. You will be enchanted by its woody aromas that subtly combine roasting and exotic notes. The finish is persistent and remarkably precise.
