Undoubtedly, today the terroir has a positive connotation. It is a sought-after sign of quality, both by winemakers who see it as a recognition of their environmental and landscape values - by consumers who find authenticity and proximity to the production sites - but also by territories for which the terroir becomes a factor of development. However, these positive values of the terroir are very recent, so it is necessary to deconstruct this notion by juxtaposing the disciplinary interpretations of the terroir. Everyone in their role (from consumer to winemaker), in their discipline (from social sciences to exact sciences), analyzes, anticipates, interprets, and defines objects related to the vine and wine.
