Vin Des Allobroges Red "Nebula" 2021 | Wine from Domaine L'Aitonnement
The Domaine L’Aitonnement, located at the tip of the Maurienne massif in Savoie, is the result of the passionate work of Maxime Dancoine. Originally from Lille, this oenologist trained in Burgundy and Switzerland took over these lands in 2016 to reveal the forgotten potential of this terroir. On soils composed of gray marl and schist, the vines benefit from optimal sunlight and exposure to winds, promoting biodynamic farming. Maxime Dancoine stands out for his meticulous work on rare regional grape varieties such as mondeuse noire and jacquère blanche, producing authentic and confidential wines.
The Nebula 2021 cuvée is a true tribute to Savoyard grape varieties. This wine is made 100% from mondeuse noire, a rare grape variety, cultivated according to organic and biodynamic principles. The grapes, harvested at perfect maturity, come from decomposed schist soils, which give the wine a beautiful minerality. The vinification, carried out in jars, preserves the authenticity of the aromas while offering a delicately structured style.
The Nebula 2021 reveals a brilliant ruby color, adorned with slight violet reflections. Its charming nose offers subtle floral aromas mixed with notes of fresh red fruits like cherry and redcurrant. On the palate, this wine stands out for its silky texture, well-controlled acidity, and beautiful aromatic persistence. The ensemble is perfectly balanced, revealing remarkable elegance.
The Vin Des Allobroges Red "Nebula" 2021 pairs wonderfully with white meats such as a poultry fillet or veal blanquette. It also accompanies vegetarian dishes, like gratin dauphinois or roasted vegetables. Served slightly chilled, it can also enhance soft cheeses.
