Vin De Savoie "Mondeuse" 2020 | Wine from Domaine Dominique Belluard
Located on the steep slopes of Savoie, Domaine Dominique Belluard is a jewel of French viticulture. Dominique Belluard, a committed winemaker, has transformed his estate by adopting organic, then biodynamic farming practices, in order to preserve and enhance indigenous grape varieties like gringet and mondeuse. This estate is distinguished by its respect for the unique terroirs composed of limestone scree and clays rich in iron alumina. In the cellar, the vinifications are natural, using indigenous yeasts, and the aging is done in amphoras or ovoid tanks to reveal all the aromatic finesse of the wines.
The Vin de Savoie "Mondeuse" 2020 is a rare and precious cuvée, limited to only 1,000 bottles per year. Made from an endemic grape variety, the mondeuse, this cuvée is a tribute to the richness of the Savoyard terroir. The vines, grown at an altitude of 450 meters, benefit from a soil composed of limestone scree and clays, giving the wine a unique structure. Aged in amphora and vinified without artificial inputs, this wine perfectly reflects the minimalist and respectful philosophy of the winemaker.
The Mondeuse 2020 captivates with its aromatic intensity and delicacy. On the nose, aromas of small red fruits, like cherry and raspberry, mingle with notes of mild spices and a subtle hint of wood. On the palate, this wine presents a silky density, with a lovely freshness and remarkable purity. The finish is elegant, marked by an enchanting persistence.
This rare wine pairs wonderfully with warm and flavorful dishes. A roast poultry or one in sauce will highlight its fruity and spicy notes. A raclette or a tomme de Savoie will reveal its regional character. For an exotic touch, pair it with a chicken tagine with apricots and spices.
