The Domaine Semper is a vineyard located in the heart of Maury, in the Fenouillèdes valley. This estate, spanning 15 hectares, is based on vines that are on average fifty years old, all hand-tended with meticulous care.

Part of the vines, perched at altitude on granite arenas in Lesquerde, allow for the production of red wines with great structure and fine tannins. In Maury, the schist and clay-limestone soils favor the creation of exceptional natural sweet wines such as Maury and Muscat de Rivesaltes. The wines from Domaine Semper are the authentic reflection of the Roussillon terroirs, blending intensity, depth, and harmonious balance.

The Côtes du Roussillon Rouge "Voluptas" 2021 is an exceptional wine resulting from a masterful blend of Syrah (70%), Carignan (20%), and Grenache (10%). The cultivation of grapes on granite arenas gives the wine a subtle minerality and an elegant structure.

Vinified with particular attention, the vintage benefits from long macerations for three weeks to extract the finest aromas. The 12-month aging on fine lees in tanks imparts a beautiful roundness and remarkable aromatic depth.

The Voluptas Rouge 2021 captivates with its intense garnet color and enchanting aromas of ripe black fruits, sweet spices, and slightly toasted notes. On the palate, it reveals a generous texture, supported by well-integrated tannins and a nice acidity, providing a long elegant finish.

This wine pairs perfectly with grilled or sauced red meats, such as a roasted duck breast with spices or a herb-crusted rack of lamb. It will also enhance a mature hard cheese, like an aged comté or parmesan.
