The Domaine des Roches Neuves, led by Thierry Germain, is a benchmark in the Loire Valley. Founded in 1850, it gained prominence through a total conversion to organic farming in the 90s, followed by biodynamic certification in the early 2000s. The vineyard, located in Varrains near Saumur, spans 28 hectares and includes 61 plots. Each cuvée precisely reflects the sand on limestone terroirs characteristic of the region.
The Saumur Champigny Red "Outre Terre" 2018 is an innovative cuvée, made from Cabernet Franc vines cultivated biodynamically. This wine is crafted with care: hand harvesting, fermentation with indigenous yeasts, 8 months maceration in Georgian amphoras (Kvevri), and 12 months aging in barrels. Bottled without fining or filtration, it is also produced without added sulfur, ensuring remarkable purity.
