Justin arrived at the family estate in 2013 and represents the 13th generation at the head of the estate. Rich in family know-how and with his experience outside of Burgundy, he brings a new breath of life and a modern vision to the production of wines. With only one white grape variety, Chardonnay, and Pinot Noir as the only red grape variety, winemaking must be done with rigour, meticulousness and intelligence. The work is done according to the lunar calendar, in accordance with the ancestral methods that we call "biodynamics" today. Only a few operations, such as ploughing, are done with the help of the straddle, otherwise most of the work is exclusively manual.

This 2021 Santenay from Domaine Justin Girardin is made from 30-year-old vines, aged in French oak barrels with malolactic fermentation, light filtration, and bottled on a favorable lunar day. The grapes are harvested by hand, pressed immediately, and alcoholic fermentation at low temperature preserves the aromas. The result is a clear, floral, and mineral wine, with notes of fern and hazelnut. It goes perfectly with a variety of dishes, can be enjoyed between 12°C and 14°C, and can be kept in the cellar for 5 to 7 years to develop even more complexity.
