

This symposium was held in Arcachon from 19 to 21 June 2003 and brought together more than 300 wine researchers and technicians from 14 countries.
Representative of world research, even if we note the virtual absence of Americans and Australians, this conference showed a real progress in the level of oenological and viticultural research, due in particular to the arrival or maturity of new techniques such as those from molecular biology (proteomics, etc.).
