Summary of the 7th International Symposium of Oenology in Bordeaux

Representative of world research, even if we note the virtual absence of Americans and Australians, this conference showed a real progress in the level of oenological and viticultural research, due in particular to the arrival or maturity of new techniques such as those from molecular biology (proteomics, etc.).

This summary will be presented to you, for each of the 4 themes, according to the following ma diagram:
- A general introduction to provide a broad view of the work as a whole
- A detailed presentation of each publication, with a grouping of publications by specialty; For example, with regard to the topic of microbiology: physiology, detection, identification, ecology, technology, genetic engineering, etc. yeasts and bacteria (not to mention mold)
- A small conclusion highlighting some perspectives of field applications
For each of the citations, a reference will be indicated, referring to the symposium-specific bibliography (listed in the appendix by theme), with the title of the publication and the names of the authors. It should be interpreted as follows: Q2.32 = Issue 32 of Theme 2.
Some topics are covered in 2 or 3 different themes: a symbolized note N1 will indicate that the topic is also covered elsewhere, with the publication number as a reference.
