This first volume, devoted to beer and its raw materials, is structured around three main parts: raw materials (barley, raw grain and sugar, hops, water) - malting (preparation, soaking and germination of barley, kiln, appreciation of malt and special malt) and finished beer (global brewing landscape, main types of beer, qualities and defects, beer output). This volume is completed by a second volume entitled Traité de brasserie Étapes du processus brassicole (Stages of the brewing process) which is devoted, in the same spirit, to the different stages of beer production (brewing, fermentation, filtration, etc.).
