Mêta Jura has set itself the goal of disseminating knowledge and culture throughout the geographical area of the Jura mountains.

What could be more natural and legitimate, then, than to take an interest in a flagship, a symbol, a myth of this space? Like many great terroir wines, Château-Chalon is indeed a constituent element of a regional culture, in this case Jura and Franche-Comté

This book aims to answer the questions that this exceptional wine does not fail to raise.

What determinisms led to the prioritization of the elaboration of such a wine on this terroir and its Jurassic soils? Why did the Savagnin grape variety, of wild origin, impose itself in the production of this wine? How did the winemakers come to defy the laws of oenology to come up with a wine with such an original ageing method and such a striking character for the senses? What has been the evolution of winemaking practices in the vineyard and in the cellar? What is the guiding principle? Who are the winemakers? Who are the consumers? What culture has been built around this wine and its winemakers? How did the notoriety of the wine come about?

Recent research in genetics, microbiology and biochemistry provides new and decisive insights that warrant the publication of a multidisciplinary monograph. Endowed with a new iconography, created especially for him, this book, the first dedicated to the yellow wine of Château-Chalon, takes stock of current knowledge, even if this grand cru still retains an element of mystery.

About thirty authors from complementary backgrounds (geologist, soil scientist, environmentalist, climatologist, ampelographer, oenologist, biochemist, microbiology specialist, historian, ethnologist, socio-economist, artist, photographer... and of course vigneron) bring completely new and unprecedented insights to the saga of the yellow wine of Château-Chalon.
