The decanter for decanting Ovarius wine is a unique concept in the world, developed by two Jurassians: Michel Patois and restaurateur Christophe Menozzi. Based on the study of kinetic energy (through movement) and working on the energy and resonance of wine, they created a revolutionary decanter. Indeed, this decanter has circular movements of a high speed that would have as much effect on the wine as 7 to 8 hours of decantation in a conventional decanter, and eliminates acidity and softens tannins in just a few seconds.
