Guardian of a centuries-old tradition, the Alambic Bourguignon is located in Beaune, in the heart of wine-growing Burgundy and seeks to preserve the ancestral art of distillation. Once one boiler per village, today there are only a handful of craftsmen carrying on this heritage. The Alambic Bourguignon processes grape marcs and wine lees from the most prestigious terroirs of the region and are among the last to produce the AOC Marc de Bourgogne and Fine de Bourgogne. They also offer a very nice range of Gin and Eaux-de-vie from different horizons.
This Fine de Bourgogne "2nd fill peated islay Bourbon cask finish" from Alambic Bourguignon is an eau-de-vie made from 100% Burgundian Pinot Noir and Chardonnay wine lees and then carefully matured for 9 years in small Burgundy oak barrels, before benefiting from a final touch of 6 months in bourbon barrels. The addition of peated Bourbon cask brings a subtle sweet and saline note at the same time. Natural. At the end of the tasting, a delicate sweetness of almond envelops the palate.
