Founded in 1946 in Chavot-Courcourt, la maison de champagne Chavost perpetuates the ancestral wine heritage, combining tradition and innovation. Guided by the values of respect for the land and sharing, it produces exceptional champagnes on a 5-hectare organic vineyard. Under the direction of Fabian, vigneron passionate, la maison distinguishes itself by a natural and environmentally friendly approach to winemaking. Its new range "And without added sulphites!" testifies to its commitment to the quality and uniqueness of its wines.
The Brut Nature Champagne "Rosé de Saignée" from La Maison Chavost is an exceptional wine from a clay-limestone terroir exposed to the north, grown on 5 hectares in organic conversion. The grapes are harvested by hand at optimum ripeness. Its vinification is based on maceration in temperature-controlled stainless steel vats followed by ageing in French oak barrels, all without added sulphites. The cold pre-fermentation maceration, without enzymes or tannins, combined with an alcoholic fermentation at 17°C with indigenous yeasts, gives the wine a unique complexity. The blend of 67% Pinot Noir and 33% Meunier, obtained 100% by bleeding, offers an intense nose of stewed red fruits such as blackcurrant, cherries and raspberries. On the palate, a remarkable structure evokes the imprint of a red wine, prolonged by a great length with persistent aromas of red fruits. Without adding sugar to the disgorgement, this champagne expresses all the purity and finesse of its terroir, offering a rich and balanced taste experience.
