LA MAISON de Champagne Billecart Salmon, founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, has been the epitome of excellence for seven generations. The vineyard extends over 100 hectares, complemented by 300 hectares of grapes from 40 Champagne crus. Most of it comes from a 20 km radius around Épernay, where the great vintages of Pinot Noir, Chardonay and Pinot Meunier rub shoulders. The family tradition lives on, with an unwavering commitment to quality. The two la maison cellars house more than 400 barrels and 24 foudres, each carefully chosen to reveal the aromatic richness of the wines. Each parcel is vinified individually, combining ancestral know-how with vat vinification for the elegance of the Billecart-Salmon style. It is a story of passion, terroir and excellence that endures in the heart of the Champagne region.
This Brut Nature Champagne from la maison Billecart Salmon is the philosophical and gustatory culmination of a Champagne wine seeking brilliance and purity. It is composed of 30% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, 30% Chardonnay from the various crus of the Marne, and 40% Meunier from the Vallée de la Marne and the Coteaux Sud d'Épernay. This champagne is non-dosed and has been aged on lees in the cellar for 40 months. It is distinguished by a pale gold visual intensity enhanced by the sharpness of a clear and brilliant whole. On the palate, its tactile approach is ample and harmonious, preserved by a mineral tension. The taste flavours are captivating, with biscuity undertones and hints of pome white fruit. On the nose, we discover a fruity pleasure in different forms (floral, dried fruit and brioche bread), with the subtle charm of lemon verbena. This Brut Nature Champagne is to be enjoyed with fine dishes such as veal carpaccio, scallops a la plancha, and raw fish marinated in citrus. The recommended serving temperature is 10-11°C. It is an exceptional wine that offers a refined and balanced taste experience.
