The Domaine Joblot, located in Givry, is one of the most respected and admired wine estates in Burgundy. Founded by Jean-Marc Joblot and now run by Juliette Joblot, the estate is renowned for producing high-quality wines that fully express the unique terroir of Givry. The vineyard covers about 14 hectares and focuses mainly on the Pinot Noir grape variety for the red wines and Chardonnay for the white wines.

The philosophy of the Domaine is revealed in the choice of sustainable cultivation and manual harvesting of the grapes at perfect maturity. Juliette Joblot attaches great importance to choosing only grapes in perfect health. Thus, the estate practices green harvesting and conscientious disbudding. The grapes are sorted in the vineyard and destemmed.

Gentle and non-interventionist vinification offers a precise reading of each terroir of the estate. The wines are resolutely oriented towards finesse and harmony with a woody ma irised touch (50% new barrel maximum). The reds are destemmed and fermented in horizontal vats with automatic punching down. The vinification is then intended to be minimally interventionist: as little racking as possible, minimal oxygenation and a sharp work on CO2 to protect the musts. Yeasts are always entirely indigenous.
