In one of his lives, Jean-Yves Jégo was a brewer for 12 years, and what a brewer he was: Canardou, in Périgord. Some undoubtedly remember it. Starting in 2001, he abandoned dry yeasts (you will understand why in these pages). The pinnacle of this career was when Canardou received the Fourquets (the highest distinction awarded to a beer by the French Brewery Museum) Gold and Bronze awards in 2009.
