In one of his lives, Jean-Yves Jégo was a brewer for 12 years, and what a brewer he was: Canardou, in Périgord. Some undoubtedly remember it. Starting in 2001, he abandoned dry yeasts (you will understand why in these pages). Then, seeking a new life, Jean-Yves realized an old dream: raising sheep... Today, wisely retired, he continues to brew in his back kitchen.
