LA MAISON Albert Bichot, founded in 1831 by Bernard Bichot in Monthélie, has established itself in the Burgundian wine world. The family heritage dates back to 1214 in Châteauneuf-en-Auxois. Under Albert Bichot I, it moved to Beaune in 1912, beginning an international expansion. Subsequent generations modernized infrastructure and conquered new markets. Albéric Bichot, since 1996, has been guiding la maison towards sustainable viticultural practices, switching to organic farming in the 2000s. Committed to the preservation of the environment, la maison supports marine research and the protection of the climats of Burgundy. Culturally, it promotes literature, music and les arts through various events. The Beaune Red "Clos de l'Ermitage" 2018 from la maison Albert Bichot is an emblematic wine of Burgundy, coming from the prestigious Beaune appellation. The "Clos de l'Ermitage" plot, perched on the Montagne St-Désiré, offers a unique terroir, characterized by clay-limestone soils resting on hard limestone from the Oxfordian. This combination gives Pinot Noir a distinctive finesse and minerality. The vinification process involves manual harvesting followed by fermentation maceration in temperature-controlled wooden vats for 18 to 21 days, and ageing in oak barrels (20 to 30% new barrels) for 14 to 16 months.
On the nose, this wine reveals an elegant bouquet of red fruits such as cherry and raspberry, accompanied by subtle toasted and smoky aromas, evolving over time towards notes of leather and undergrowth. On the palate, it offers a fleshy and elegant texture, structured by dense but fine tannins. Its beautiful length is dominated by the distinctive minerality of the terroir. To fully appreciate this wine, it is recommended to serve it at a temperature of 15-16°C. It can be kept in the cellar for 3 to 5 years, or even longer. As a gourmet pairing, it goes perfectly with roasted or braised red and white meats, as well as medium-bodied cheeses.
