This book, the only one entirely dedicated to spirits of viticultural origin, provides a comprehensive overview of the knowledge in the field. It aligns with the general approach of all players in the spirits sector, aiming to improve production and quality: preserving the grape's aroma, improving distillation yield, eliminating defects and undesirable substances without altering the product. Offering a realistic portrait of the state of the market, it covers all products, whether they are spirits made from wine or pomace (armagnac, brandy, cognac, grappa, tsipouro, orujo...). This book was created from the presentations at the 2nd International Symposium on Traditional Spirits of Viticultural Origin, held in Bordeaux from June 25 to 27, 2007.
