Description
Champagne is a world to discover! Gérard Liger-Belair and Guillaume Polidori have developed imaging techniques that allow for unprecedented images of this exceptional wine. In a flute, the movement of the bubbles gives rise to spectacular and unusual phenomena that reconcile art and science. Similar phenomena are even found at a completely different scale in the atmosphere, the ocean, and even the cosmos. Let us marvel at this lesson in nature within our reach, made possible by the advances in science and the curiosity of those who pursue it. A surprising scientific approach to discover and better appreciate champagne.
Gérard Liger-Belair is a professor of physics at the University of Reims-Champagne-Ardenne. His research focuses on the processes behind the formation and behavior of bubbles in champagne and sparkling wines. He is the recipient of several international scientific awards and the author of "Le Champagne: Effervescence, la science du champagne" and "Voyage au cœur d'une bulle de champagne."
Guillaume Polidori is a professor of fluid mechanics at the University of Reims-Champagne-Ardenne. His research focuses on flow visualization and convective transfers. He is the co-author of "Voyage au cœur d'une bulle de champagne."
