The Chassagne-Montrachet Blanc 1er Cru-Les Caillerets 2023 is an exceptional wine, coming from the "Vigne Derrière" plot. This locality is characterized by a stony and rocky soil, with a southeast exposure. The soil in the upper part of the plot is shallow and sloped, while the lower part is richer in clay. This diversity of the terroir gives the wine a unique balance between minerality and richness. The winemaking methods are traditional, with fermentation using indigenous yeasts and aging in oak barrels for 12 to 18 months, with 30 to 40% new barrels for the Premier Crus.
The Chassagne-Montrachet Les Caillerets 2023 reveals a brilliant golden robe. On the nose, it expresses delicate aromas of white fruits, white flowers, with hints of spices. On the palate, the balance is remarkable between the minerality, brought by the upper part of the terroir, and the richness due to the clays of the lower part. The wine is distinguished by its complex structure and its spicy aromas, which linger long in the mouth.
This Chassagne-Montrachet 1er Cru pairs perfectly with refined dishes such as grilled lobster, fish in creamy sauce, scallops, Bresse poultry, or soft cheeses with washed rind like Epoisses.
