The Domaine Paul Pillot, a reference in Côte de Beaune, was taken over by Paul Pillot in 1968 before being passed on to his son Thierry Pillot in 2004, after viticulture experiences in South Africa and Australia. Alongside his sister Chrystelle, he continues meticulous work on prestigious plots located in Saint-Aubin, Santenay, and Chassagne-Montrachet. The estate follows principles inspired by organic farming, without certification, with an approach focused on respecting the terroir and natural winemaking.

The Bourgogne Chardonnay 2022 comes from vines cultivated in a preserved environment, where the limestone and clay soils of the region provide a subtle minerality and remarkable tension. Aging in oak barrels (20 to 30% new barrels) for 12 to 18 months imparts a silky texture and a beautiful aromatic balance to the wine.

Upon opening, this Chardonnay presents an expressive nose dominated by notes of white fruits, such as pear and apple, accompanied by a slight floral touch.
