This cuvée comes from a six-hectare plot located on the heights of Volnay, at the heart of a region renowned for its complexity and its ability to produce exceptional wines.
The "Sur-Roches" climate is characterized by a very rocky soil with many rocky outcrops and a steep slope. This natural drainage promotes the aromatic concentration and tannic finesse of the Pinot Noir, emblematic grape variety of Burgundy.
The philosophy of the estate is based on traditional practices that respect the terroir. The grapes are harvested Manually then vinified in 100% whole cluster fermentation. The long maceration, about 25 days on skins, allows for the delicate extraction of aromas and structure, while preserving freshness and balance.
The breeding takes place in oak barrels aged from one to three years, in order to add complexity without masking the expression of the fruit. The low-intervention approach of Maxime Dubuet-Boillot guarantees a wine of a great authenticity, marked by the imprint of the terroir more than by the aging process.
