Located under the Château de Pommard, the plot of The Great Carelle covers 50 ares and is home to vines that are over sixty years. Formerly classified as Pommard Villages Until the 1950s, this terroir benefited from an ideal southeast exposure and a soil rich in Limestone and in gravel, offering the grapes optimal ripeness and a beautiful aromatic concentration.
Winemaking, carried out with precision, begins with a 90% scratch, followed by a traditional maceration with Punch-downs and Reassemblies regularly to extract color and structure. The pressing, carried out with care, helps preserve the integrity of the fruit. The aging takes place for 12 months in French oak barrels, including 30% new ones, bringing a subtle woody complexity and an elegant tannic structure.
