Thanks to numerous testimonies from his close ones and disciples, this October 2023 issue explores the abundant scientific legacy of Jules Chauvet, still relevant in contemporary oenological practice.
Jules Chauvet made decisive contributions to the understanding of wine through his research in three major areas:
the biology (including his studies on mycoderma cells),
theApplied oenology (collage, acescence, carbonic maceration, high-temperature winemaking...),
the tasting (with the codification of aromas and sensory mechanisms).
Collaborator of Paul Bréchot from the Pasteur Institute, he has published in scientific and professional journals such as the Bulletin of theOIV, the Technical notebooks of the INAO, or even Vine and Wine, and participated in numerous oenological conferences.
His scientific approach to wine is embodied in foundational publications such as:
The Aroma of Fine Wines (1950),
Wine tasting, its mechanism, its laws (1951).
From 1962 to 1988, Chauvet hosted more than 40 trainees, forming a generation of enlightened winemakers. More than a merchant, he was a passionate researcher, leaving behind a mine of Unpublished notes and notebooks, still little explored to this day.
Thanks to the support of The Jules Chauvet Association, this issue highlights the modernity and importance of its contributions, at a time when the natural wines are experiencing a global revival.
