The Domaine Maxime Dubuet-Boillot represents a fresh breeze blowing through the Volnay vineyards — a symbol of the new wave of Burgundy winemakers embracing both tradition and innovation.

Born into a family of growers, Maxime began his career far from the vines, as an automobile mechanic. Yet the call of the land was strong. Encouraged by his uncle, a Volnay grower, Maxime took over 5 hectares of vines in 2019, determined to bring his own vision to life.

In the vineyard, he focuses on organic methods and soil regeneration, reconnecting with the rhythms of nature. In the cellar, Maxime asserts his personality through a low-intervention winemaking style, marked by whole-cluster fermentation, gentle extraction, and minimal sulfites — an homage to the approach of his grandfather, Pierre Boillot.

From his very first vintages in 2019 and 2020, Maxime has impressed with wines of balance, elegance, and drinkability. His name is already emerging among the rising stars of the Côte de Beaune.
