Climate change is profoundly transforming the world of vineyards and wine. From the early development of plants – making them more vulnerable to spring frosts – to the intensification of extreme events (heatwaves, heavy rains), French vineyards are increasingly under pressure.
The drought – particularly pronounced in the south of France – leads to a decrease in yields and alters the sensory profile of wines, with an increase in alcohol levels, lower acidity, and modified aromas. New areas are also becoming suitable for viticulture, redefining traditional territories.

Nathalie Ollat, an agronomist specializing in vine physiology, leads the "Ecophysiology and Functional Genomics of the Vine" Mixed Research Unit in Bordeaux. Her work focuses particularly on rootstocks, root systems, and their interaction with the environment.
Jean-Marc Touzard, an agricultural economist and research director at the INNOVATION Unit in Montpellier, specializes in innovative agricultural processes, with a strong commitment to climate change adaptation issues in the wine sector.
