These Seventh Clos-Vougeot Meetings have the ambition to re-examine the cellar, not only as a conservation space, but as mirror of civilizations and symbol of the evolution of our relationship with wine.
Through the testimonies from specialists from around the world, a about thirty international speakers analyze the cellar in its multiple dimensions: history, , oenological, , Cultural, , Economic and even intangible.
The traditional cellar, carved into the rock and marked by centuries-old expertise, today coexists with high-tech spaces, modern architectures designed for the optimal storage of fine wines or even some virtual caves, reflecting the financialization of wine.
The reader is thus invited to reflect on what represents the personal cellar : a intimate space, revealing of a singular relationship with wine, to the memory, to the time and at the transmission.
