The Author:

Éric Beaumard is one of the best sommeliers in the world. He was named the best sommelier of France in 1992, the best sommelier of Europe in 1994, and the runner-up for the best sommelier in the world in 1998. He developed the wine cellar of La Poularde under chef Gilles Étéocle, a two-Michelin-star establishment, which he left in 1999 for the adventure at George V. There, he entirely composed the wine cellar and, leading his team, worked closely with chefs Philippe Legendre and later Christian Le Squer. In 2003, he was named Sommelier of the Year by the magazine Le Chef. He is the director of the famous restaurant Le Cinq, at the Four Seasons George V in Paris, which has two Michelin stars, and he currently manages the wine cellars of the Four Seasons establishments in Europe.
